Recipe: Grilled Summer Mexican Street Corn

6 ears of fresh sweet corn, shucked

2 tbsp lite mayonnaise

2 tbsp plain Greek yogurt

2 tbsp fresh lime juice

1 tsp chili powder (or cayenne powder)

1 tsp cumin powder

Sea salt and cracked pepper to taste

1/4 cup coarsely chopped Cotija Mexican cheese (alternative: shreddedparmesan cheese)

1/4 cup fresh chopped cilantro

1 lime, cut into wedges as garnish

Olive oil spray


Mix together mayonnaise, Greek yogurt, and fresh lime juice in a small bowl. In another small bowl, mix together chili powder, cumin, salt and pepper. Brush or spray corn lightly with olive oil. Grill about 10 minutes, turning frequently to avoid burning. Corn should be cooked through and browned in places. Take corn off grill and brush with yogurt and mayonnaise mixture, then squeeze lime over corn and sprinkle with spices, cheese, and cilantro. Enjoy!
