At our recent Art, Rhythm and Wine event held at Cielo Village, one of the standout vendors was Deanna’s Gluten Free Bakery, which provided a delectable gluten free carrot cake with a cream cheese frosting. We spoke with Deanna Smith, the owner of Deanna’s, about what it means to be gluten free, why she started baking, and about all of her delicious food!

Explain gluten to the readers.

Sure thing. Gluten is a protein naturally found in all forms of wheat, rye, and barley. But it is hidden in almost everything from beauty products and packaged foods, to medications and supplements as preservatives, artificial colors, and flavors.

What kind of ingredients do you use to make your products gluten-free?

Because I use ingredients that are Naturally Gluten Free, there are no worries of Glutens and Gluten contaminants.  My special formulation of Whole Grain Brown Rice Flour, Tapioca Flour, and Organic Evaporated Cane Juice are grown on farms that exclusively harvest Rice, Tapioca, or Cane Sugar, as well as the other ingredients I use to create my Gluten Free Recipes.

Why did you get into baking and creating Gluten Free products?

Like many little girls, I was always in the kitchen with my Grandma, so you might say I did it for the love of baking with my Nana. But the unexpected reason for creating Gluten Free products was for the love of my family. In 2006, my 3-year-old cousin Karlie was put on a GF diet to rule out the possibility of a 4th generation Celiac. Great thing is, she was not Celiac!  But in the process, I made her some Gluten Free bread so she didn’t have to go without her PB&J.  She took it to preschool and people started calling me for orders… long story short, I have been growing ever since.

What kind of baked goods and products do you make?

When I opened my doors in 2008, I thought I was going to make just a few flavors of bread, but quickly realized that the undiscovered market needed everything from cookies, cakes, buns, pizza crust… you name it, no one in the US was making them Gluten Free! Every time a customer requested something new, I never said ‘No;’ I just said come back in a couple weeks and I will have a sample for you. I let my customers’ cravings drive my recipe list of over 60 Gluten Free and Allergen Free Breads & Pastry.

Where are your products available?

You can find my GF products at local grocery stores like Jimbo's, Major Market and Keils.  There are [also] many restaurants like Fig Tree Café, Mike’s BBQ, Notorious Burger, and Seasons 52 nationwide. If you happen to be on vacation, Omni SD & La Costa, Legoland, and all Disney properties have my products.

Is there anything else you want our readers to know?

Yes, most important to me… there are some many things in our food chain that should never be consumed by humans, let alone any living creature. Read labels and learn what you are feeding yourself and where it comes from. Education is our best resource; we all feel better, look better, and are more productive and happy when we eat healthy, truly natural foods. Salute!
