Eggplant Veggie Stack

Delicious vegetables sautéd and stacked as a perfect, healthy appetizer to any meal!

1 Fresh Eggplant

1 Heirloom Tomato

1 Sweet Onion

6 Slices Havarti Cheese

Sea Salt & Fresh Ground Pepper

Wash and dry eggplant and heirloom tomatoes, slice ½ inch thick, cover with extra virgin olive oil, sea salt and fresh ground pepper; set aside. Slice sweet onion ¼ inch thick, sauté in pan over medium/low heat with 2 tablespoons extra virgin olive oil, sea salt and pepper until soft and caramel in color; cover and set aside.

Place eggplant and tomato slices on medium heat grill, 2–3 minutes on each side, then remove from heat. Assemble eggplant on bottom followed with a slice of Havarti cheese, heirloom tomato, another slice of Havarti cheese and finally topped with a heap of caramelized onions. Serve warm.
