Garlic Squash with Pine Nuts Recipe

Sunburst and Zucchini Baby Squash

Veggies are always a great addition to any meal. Enjoy some delicious sunburst and zucchini baby squash baked with pine nuts! 

​1 bag of sunburst & zucchini baby squash

2 cloves garlic, minced

1⁄4 cup pine nuts

2 tbsp olive oil

Sea salt and pepper, to taste

Preheat oven to 400°. Rinse and pat dry baby squash. In medium bowl, combine baby squash, pine nuts, olive oil, garlic, salt and pepper. Toss to evenly coat squash. Place in oven-safe dish; bake for 30 minutes or until squash is tender. Mix halfway through baking to avoid burning. Serves 4.
