4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint of whole milk
1 cup heavy cream
3 ounces of Irish Whiskey
1 teaspoon freshly grated nutmeg
1 teaspoon cardamom
4 egg whites
6 Cinnamon Sticks
Using a stand mixer, beat the egg yolks until they lighten in color. Gradually add 1/3 cup sugar and continue to beat until completely dissolved. Set aside. In a medium saucepan over high heat, combine milk, heavy cream, cardamom, and nutmeg. Bring to a boil, stirring regularly. Remove from heat and slowly add the egg yolk and sugar mixture into the pot. Continue to cook until the mixture reaches 160°F. Remove from heat. Stir in the Irish Whiskey, pour into a medium mixing bowl, and set in the refrigerator to chill.
In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running, gradually add 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture. Portion into 6 cups, sprinkle with nutmeg, and add a cinnamon stick to each glass.
