The new name is a nod to Henry Witherby, the very first tenant in the original Belmont building that still forms the bones of this lovingly restored Gaslamp property. Then there’s Brandi, the Food & Beverage Manager, who practically glows with enthusiasm when describing the signature cocktails or the backstory of Chef Robin’s recipes. Behind the bar is Luis, shaking up an 1886 Old Fashioned like he invented the drink himself (and who’s to say he didn’t?).

And of course, there’s Kathy, the visionary owner of The Beau Hotel. She bought the building when she was just 25 years old—because when you fall in love with something, you don’t wait. Her fingerprints are all over the experience, from the curated antiques to the hidden “smugglers alley” that nods to the building’s Prohibition-era past.
