CHOCOLATE MAKING—DALLMANN FINE CHOCOLATES

Dallmann Fine Chocolates is the very definition of "new." A now world-renowned enterprise specializing in gourmet chocolate with a twist; frequenters of Seaport Village can spot the outlet in the old police headquarters. The interior is a chocolate store unlike any other. Flowers on the walls, baskets and boxes of chocolate on the shelves. It isn’t until you open the boxes and take a bite that Dallmann Fine Chocolates becomes Willy Wonka’s Chocolate Factory. Flavors run the gamut from milk chocolates and fleur de sel for the uninitiated, to more outlandish and oddly satisfying fare like cardamom & blood orange, and bacon & applewood smoked salt. Nobody thinks chocolate and curry go together until someone is innovative enough to pull it off! While owner and chocolatier, Isabella Valencia, may not be too willing share her more innovative recipes she does host several classes as well as chocolate tastings at her location in San Marcos. The classes range in both skill level and price and can be found on their website. With all the amazing places to eat in San Diego, getting a little more hands-on with your next confection may be just the thing to shake up the usual date night! dallmannconfections.com/events

FLYBOARDING—FLY GUYS WATERSPORTS

Flyboarding, also called hoverboarding, is one of the great crazes sweeping San Diego due in small part to the fact that you can fly! The board uses pressurized water to shoot the rider into the air, which sounds amazing and terrifying! Taking place at the Carrillo Isle Marina in the San Diego Harbor; all courses start with ten minutes of instruction and then various amounts of flight time with the instructor assisting you the whole way through. Safety is of course a prime concern, considering that you’re flying through the air on a pressurized board. All the necessary gear is provided in your package; from fuel to the all-important life jackets, and the Fly Guys even offer GoPro footage with some packages. Their full list of offers are viewable on their website. Just like a rollercoaster, flyboarding seems intimidating, but once you get in the water you’ll wonder why you didn’t get on sooner. flyguyswatersports.com

NEW HORNBLOWER CRUISES—HORNBLOWER CRUISES AND EVENTS

San Diegans are no strangers to ocean views or cruise ships. Tall ships and small jet boats to luxury cruisers that give most military carriers a surprising amount of competition! One wouldn’t be blamed for getting used to the sight or even growing unconcerned, but even this familiar scene is changing and reinventing itself. Hornblower Cruises and Events has been working on their lineup and there are new things for San Diegans to enjoy on the water. Their well-known "Champagne Brunch Cruise" on the Sky Deck is offering more of its soul with some live music. The now "Jazz Champagne as Brunch Cruise" offers more atmosphere to the dining experience with everything from sobering mellow ballads to more kinetic upbeat swing. It’s said that jazz is all about the notes that aren’t played, but every tone the Dave Scott Duo plays promises to be worth listening to. "Rock the Yacht" is also one of the newer events on offer, and an exciting way to party through the late night. The summer exclusive, "Bands on the Bay" also makes its return, promising a full three-course meal as you cruise through the night and "Sights and Sips" is a classic. From calm vibes and brunches to strobe lights, along with two new offers; cruises are a San Diego classic for a reason! For more information on your next fantastic cruise visit their website! hornblower.com/home/sd

So, what will it be, making handmade chocolate for that special someone, flying through the air, or sailing on the bay? Maybe something completely new? Whichever you choose, remember to stay classy San Diego.
