Coconut Water Ice Cubes

I recently uncovered the magic that is coconut water. I learned about it in a health mag and decided I would give it a try. I first went out and got unflavored coconut water, tasted it…yuck. Not for me.

I determined to give it another chance, and got coconut water infused with peach and mango this time…delish.

But coconut water has a butt load of (natural) sugar (14 grams!). And watering it down, I learned, does not taste too great.

I found the solution though! Freezing it as ice cubes.

Genius!

These are no ordinary ice cubes. These pure coconut water ice cubes are delicious to nibble on as a snack, or when put in sparkling water, your alcoholic beverage of choice or smoothies – the taste is neutral enough to be blended with practically any smoothie flavor.

Naturally refreshing, coconut water has a sweet, nutty flavor. It has 15 times more potassium (potassium helps maintain blood sugar and impact brain function) than found in traditional sports drinks. And it is high in manganese, magnesium, and electrolytes (which are great for post-workouts) as well.

To make:

Pour coconut water into an ice cube tray and freeze! Simple!
